It melts like a dream for things like this and works pretty well for pizza and such. I might also add some of the feta you mentioned in your other comment to mix flavors. I have no experience with soy-based feta at...Jason-<br />I have no experience with soy-based feta at all, sorry! The feta I use is sheep vs. cow and works very well for our family's needs. Since this dip doesnt need any cooking to make it melt, yours might work just fine. Perhaps reduce the feta and add a bit of silken tofu or soy-based cream cheese or sour cream for balance to the consistency and add extra lemon to punch up the flavor? No dates in this house...So I just whipped these up. No dates in this house, so I used raisins. The dates probably add more moisture, so I found the balls a little crumbly. So I added 1 Tbsp-ish of peanut butter, which totally solved the problem. They hold their shape without being sticky. And, only a hint of peanut butter.
